Masha has been making khachapuri since she was five, long before there was any thought of a restaurant. The one she cooked for Daniel is the reason this place exists at all - and the thing she's always loved most is watching someone try it for the first time. On our first Christmas Day she set up a table upstairs and made khachapuri in front of everyone, with kids getting their hands in the dough. This is that, with a bit more structure and a glass of wine. You'll learn how it's actually done in Georgia, and why we make our own cheese here rather than buying it in - the whey goes back into the dough, which is much of why ours tastes the way it does. Then you make your own. Shaping, filling, into the oven, out again, and you eat it straight from the tray. You'll also leave knowing how to make one at home. No specialist kit, no ordering cheese from Tbilisi. Everything you need is on the shelves of a normal supermarket, and we'll show you which substitutions hold up and which ones fall apart.
