If you’ve been searching for delicious khachapuri in London, we’ve got exciting news. We’ve just trialled our snack-sized Georgian cheese breads at Etudé Coffee in Crystal Palace — and the response was incredible. Here’s what happened on our first ever pop-up day.
This morning, we delivered our very first batch of khachapuri to Etudé Coffee — and within just 20 minutes, half the stock was already gone.
It all began just a few days ago. Daniel popped into Etudé — his favourite local café — to ask whether they might be interested in stocking khachapuri in their freezer, if we were to launch officially.
A quick conversation later (and a message to the owner), a plan was in place to bring in samples for the staff to try.
By pure coincidence, we’d just finished developing a snack-sized version of khachapuri the day before — ideal for being served warm at a counter. So when the café requested something oven-friendly for takeaway or dine-in, we already had a perfect fit ready to show off.
The verdict from the team? Unanimously positive. So we decided to take the leap and see how the public would respond.
It was a whirlwind from there. Daniel had never baked khachapuri solo before — but Masha quickly gave him a crash course in making the dough, and together they whipped up a trial batch mid-week (with some very lucky neighbours acting as early taste testers — their feedback was glowing).
Fast-forward to today, we had a few challenges to overcome to make sure we could deliver the goods. Masha is away. Daniel has to leave london at midday. But we didn’t want to put this off. So, last night, at 2am, Daniel was baking and delivered the fresh khachapuri to the café by 8:30am.
And it was absolutely worth it.
Within just two hours, the entire batch had sold out. The customer response was incredible — and Daniel felt like a minor celebrity with all the compliments pouring in. Even the café team couldn’t resist — Jo, the manager, declared it:

On the way back to the car, a couple who had grabbed a khachapuri to go even stopped Daniel on the street to say how much they loved it.
Needless to say, we’re already working on logistics to keep Etudé stocked consistently with fresh, oven-warmed khachapuri for Crystal Palace locals — and we’re exploring other spots around London too.
